Purging with CO2

I've been brewing for a couple years now, but have never understood purging with CO2. I do not keg...yet. so my questions are:

1. How does one purge headspace in a carboy (say, when adding dry hops or pulling a sample from a sour)?

2. What equipment is necessary for doing so?

3. Are there any video tutorials on how to do so?

Getting kegging stuff one piece at a time would make getting all that stuff more palatable, and being able to use some of it in the meantime would help too.

There are cans of inert gas (https://www.midwestsupplies.com/private-preserve) I have used in the past. Now I have an extra co2 tank I put a nozzle from home depot on some hose to purge head space. The nozzle was $6 and needed a male male connector which was $1. Not sure about vids, but youtube usually has something.

I just use a hose off of my regulator and pop off the air Lock and fill with co2 and I lift the bung a tad to allow the o2 to be pushed out .

When getting a sample I just go about 2psi while i open the spout. Dont need anything special , except tank and hose .
