Probe thermometer reading

So, I just got this thermometer. Do I need to submerse the entire metal probe to get an accurate reading, or do I just need to submerse the tip? Also, is it accurate in measuring room temperature?

The whole thing doesn't need to be submurged, but you'll want at least a couple inches in the mash/water/etc to get an accurate reading.
 
The thermocouple junction is located in the very tip of that probe and that's where the action is. IOW, you only need to submerge the tip, but if you want the best accuracy, I would insert it at least an inch or so. I have that same thermometer and it has proved to be both accurate and reliable.
