Thanks for the link. I was cooking dinner and peeling potatoes when the thought crossed my mind. I think everything has been tried at one time or another!
 
My LHBS had a potato stout on tap brewed by one of the owners. He used 60% potatoes in the grain bill, he said a certain type worked best and all the others he tried didn't...but I forget what type! Anyway, the beer was very good.
 
Interesting article from byo, I'd assumed that potatoes would need some barley or conversion... but the article implied that potatoes can convert on their own. I've wondered about using them since when ever I make mashed potatoes I've been creating starch water.
