What are some good options for plumbing between kettles? Will copper, pvc, or pex work as well as stainless or food grade tubing?
 
Yeah plastics aren't good above ~140F. Are you planning to hard plumb everything? Why not just silicone tubing?
 
SS will be crazy expensive for anything over 1/4 to 3/8 tubing. and its not easy to bend.

copper is cheap, but a no-no if you ever want to try Low oxygen brewing.

silicone is not exactly cheap, but not super expensive either. flexible, easy to work with, etc. as long as you're not putting any high pressure flows through it you shouldnt have problems. its been known to pop under high heat and high pressure (pumping boiling wort), even though though they're rated for heat.

pex can be rated as high as 200F. alot are only 180F though. so depends on where you are using it. as long as you're not moving boiling wort through it you can probly plumb most of your set up with it- HLT should max at 180, MT to kettle around 170F, so its still do-able for a brewhouse, just not the whole thing. its not super flexible, but cheap. or at least its cheap until you start buying lots of fittings, and you'll probly need alot of 90 elbows, barbs, etc.
