Here is what I have left over from a couple different kits. What would you do different?

For 5 gallons it looks a lot more like an IPA to me. If it were me, for an APA, I'd drop the pale malt down to about 10lbs or so and also drop the crystal 40 down to 8oz. The hopping is pretty agressive on this one...not a bad thing!

For an IPA I'd (again) drop the crystal 40 down to 8oz or even leave it out entirely. The hop bill looks pretty good, I am just about to kick a keg of cascade/amarillo IPA and it's pretty tasty!

15# of malt and 7oz of hops? With a decent starter you can amp it up to 7gallons maybe.

Quick math: At .65 efficiency you're still at 1.049 for 7 gallons.

The grainbill is a mix of 2 pre mixed kits. With one kit being 9 lbs 2 row and 1 lbs crystal 40 and the rest from another kit. Hops are where I have the most room to work. I would like to get rid of all these grains before they get too old. Would I be better off just using the 9 lbs 2 row and 1 lbs crystal 40?

What would you do?

That's a lot of crystal malt. I think it'll be a bit sweeter than I'd like as a result, but I think the hopping will help cover that.

I think it's an IPA, not an APA. I like it.

Will mashing lower 148 to 150 and or more simple sugars help?

Brewing this tomorrow morning..Should I mess with table sugar to help dry it out due to all the crystal?

I wouldn't. Mash long and low, and I think it'll be fine!

Crystal malts do tend to leave some sweetness behind, but of course the sugars are fermentable, so with a low mash temp, you can still finish at 1.008-1.012.
