I'm making a 5 gallon batch of Cyser. With the starting gravity being so high, I'll probably need to pitch two packets of yeast. I was planning to use the Montrachet but find I only have one packet left. But I do have an extra Safale 05. Any harm in pitching both varieties at the same time?

do a nutrient rich culture using the must with the one packet of montrachet -pitch the culture after you get some exponential growth.

there you go -in a few days time you can get your one packet of montrachet to be equal to 4 packets of it. just by waking them up, feeding them well and adding additional nutrients.
