Summer in South Carolina = Peach season.

I'm getting ready to start a peach wine. I have a recipe but I was considering adding some mint leaves to it for a little extra "fresh" taste.

Good idea or a waste of time?

While we're at it, what flavors would work well in a peach wine?

I have plans for a peach vanilla.

Also thinking of a peach thyme. Peach apricot would be great, also peaches with blackberry, rasberry or blueberry.

I'm also loving the combo of lavender and fruit, a really peachy wine might work.
