Hello friends,
I need help deciding what special quad I should brew for this holiday season:
Pannepot Grand Reserva or Rochefort 10 clone?
Pannepot calls for Wyeast3522, which I always have on hand, and only 1 pound of candisyrup. Not too expensive to brew, and it's a highly regarded quad, but I've never tried it.
Rochefort calls for the Rochefort Strain (1762 Belgian Abbey II, IIRC) and THREE pounds of candisyrup, which ups the cost significantly. I've never brewed with so much candisyrup--but it's one of my all-time favorite quads.
I know it's a matter of personal preference but thought I'd put the question out there. Specifically, I'm hoping to hear from anyone who has tried Candisyrup's recipes with EITHER or BOTH of these fine beers, and what their experience(s) have been. Both call for extended cellaring times and a fairly expensive grist/adjuncts bill, so I'm hoping to get some input before I drop the coin.
