I underestimated my mash efficiency doing a decoction mash with a Berliner Weisse. Goal was 1.032 og and I'm at 1.041. Think I should water it down or just roll with it? Watering it down prior to fermentation could be a challenge as I have 6 gallons in my fermentation bucket already so I might need to water it down after fermentation before kegging, dump some out or split to another fermenter. What does everyone think? Roll with it or puts with it some more? It was kettle soured so it is just us-05 working in it now.
 
I'd, personally, leave it. Yeah, you overshot but I wouldn't consider this spitting at the feet of the style (as it sounds like you're trying to stick to guidelines?). IBU should be lower than originally planned (if you're hopping at all), so technically there shouldn't be any issues with hops getting in the way of souring.
