Overrun withh PID controller in a converted electric turkey roaster

Years ago through the help of a friend on cheeseforum.org, he's no longer there. Looks like he's on to consulting. Through his help, I converted an electric turkey roaster into a cheese vat, controlled by a PID Controller, SSR, etc.

Worked well. However dialing in for the temp to "coast" to target was a bit difficult. Alway ran over by a few degrees. Definitely not an electronics guys. Is there a way tighten up the overrun, acknowledging the only heatin available is the hot band around the sides?

I love what the alpine bakers dol Copper cauldron, base of flame below, drag the flame the fell back when ready.
