I have 30# of "Overley Wheat" which appears to be a variety developed by Kansas State University in 2003. I looked up some info and it appears it's a "Hard Red Winter Wheat". Anybody know how it'll react if I mash it? What if it's malted, then mashed?

This wheat doesn't have any enzymes as is. You have to either 1) do a cereal mash (cooking it to loosen up the starches and break up some proteins) then mash it with some malted barley (at least 1/3 of total) or 2) you could malt it, though you may still want to mash it with some malt barley.
