This past Sunday I tried my first batch of IPA that I have brewed in over 10 years. I had a buddy over to help cook my second batch and to help me sample my first bottling. The first couple that I opened were spot on! Nice hoppy taste, perfect head. All was good...I was feeling good and had impressed my buddy. Several beers in, I opend a bottle and it was overly carbinated and just fizzed over for a bit. When I drank it, it had a sweet/fruity taste to it. Not really awful, but just a different flavor than the previous bottles had. So far I have drank around a 12 pack of them and so far 3 have had this problem. I used a bottling bucket and 3/4 cups of corn sugar for priming. I just let the flow of the beer from raking it to the bottling bucket to mix the sugar. Could my problem have come from the sugar not being mixed well? Would I have been OK to use my sanitized spoon to gently mix it a little better before bottling? Or is there something else that could have caused this?

Did you disolve your priming sugar in warm water? I always make sure to fully disolve the sugar in some water, add this to the bottling bucket, and then rack on top of the priming sugar. If i'm not sure of my final volume (usually if your dry hop) I'll rack first and see what my yield is, and adjust how much sugar i need to prime with. I still dilute in water but, obvoiusly, I pour into the bottling bucket after racking. I usually stir with a santized spoon, but becareful not to spalsh. Just enough to get things moving.
 
You are supposed to boil usually in a cup of water for 5 minutes. Allow to cool off covered with sterilized lid on top. I then put in bottling bucket and rack beer over on top of it. The key with the boling is o keep what you are putting in sanitary and the sugar is also well dissolved.
