I am making a sweet onion wine my SG is 1.060 my Ph is 4.6 using a 1122 yeast ,has anyone ever made this type wine before? this is my first onion wine I thought i'd give it a try. do i need to put acid blend in?thanks
 
Thanks,that sounds pretty close to the recipe I used ,his number two recipe.
I used 1 lb golden raisins chopped instead of concentrate.
 
Racked the onion wine 2nd time,very clear,very mild wine so far.one more racking ,then bottle it.
 
getting ready for 3rd racking on my onion wine,great color,taste is still mild,I mey stabilize ,let sit 10 to 20 days and bottle.I will let you know in 6 months or so how it came out.
 
Stabilized my onion wine,will wait 30 days to see if it will fement or I will bottle it,taste is very nice, I will let it age another 6 - 12 months.
