My wife's uncle helped me drill a hole for my weldless ball valve. Well he grabbed an o-ring for the hydraulics system on his tractor. Now I'm wondering if that this is safe to mash or boil with it.

Depends on the type of rubber o-ring. It will seal but its most likely not going to be rated for food contact.
