So I made the BYO Red hook ESB today. http://byo.com/english-bitter-pale-ale/item/2334-redhook-esb-clone

Long story short I got more pre boil wort than I expected and it wouldn't all fit into my brew pot. I wasn't concerned because I've made many batches in my pot, so I just dumped it and boiled. I didn't realize what a difference a 90 minute boil would give me. I only have 3 1/2 gallons of wort.

My question is, should I mix up a gallon of pale DME and add it to what I have, or pitch and keg my 3 1/2 gallons. I hit my target OG, 1.058, but I'm afraid it will be too hoppy because of the lack of wort.

And yes, I'll be upgrading my brew pot.

If you hit your OG, the beer will be balanced correctly.

You could go either way and both would work fine. Personally, I'd just let it go and see how it turns out.
