Not enough must?

I just started a batch of cider. I tried out roughly 1 gallon in a 5 gallon pail for primary fermentation - now I'm wondering if that could be a problem? Does the level of the must need to be sufficiently high within the container it resides in or is it ok to have a gap between the top of the container and where the must is?
 
I've been told carbon dioxide is heavier than air so ..as long as it has fermented some you souls have a blanket of co2 on to of you must.
 
For primary, the beginning of fermentation, it's fine to have it in a bucket with lots of headspace. After primary, when the fermentation slows down, it needs to be in a jug/carboy with a bung and airlock. You want to top up to near the bung, to reduce and minimize headspace. A Carlo Rossi jug is fine, or any other one gallon carboy.
