I am new to cider making and bought a 5 gallon fermenting bin and airlock to press my juice into. However, I have only got 2 gallons of juice from my apples. Will that much air space in the bin ruin the fermentation? will I still get cider when I come to rack it off into bottles?

Appreciate any help!

Either get a smaller carboy, or get more juice. You should be filled up to the top "shoulder" of the carboy. Perhaps fermenting in two 1 gallon jugs will do the trick for you.

You're fine for your initial fermentation, but you can't have much, if any, air space when you rack for your secondary fermentation. My understanding is that it will turn to vinigar. You will need a smaller carboy, extra juice (tho I've never added 3 gallons, only I), or a ton of lead free marbles to take up the extra space.
