Anyone degassed a Fidens Double IPA and taken a pH reading? The brightness and inherent drinkability of their higher ABV, highly hopped beers is what stands out to me. This generally comes from a lower final beer pH which is relatively hard to achieve with excessive dry hopping. If final pH is low it wouldn’t surprise me if there are acid additions with DH. Never used 1272 so no idea how low it gets at the end of fermentation. Higher ferm temps can result in a bigger pH drop during ferment.

On the podcast they stated they check PH pre dryhop and aim for 4.3-4.39, at the rates they dryhop that would bring them in the 4.5+ territory easily

We’ve made quite a few beers with Peacharine and it’s fine. Honestly nothing that mind blowing. It comes across kinda muddled. Nothing really sticks out to me. There are a few new varieties from Freestyle in the works that could be promising. The most exciting thing to look forward to out of NZ are the hops from Garston in my opinion. They’re 600 miles farther south than the typical growing region but happen to be the same latitude south as Yakima is north of the equator. Their Motueka, Rakau, Cascade, and especially Riwaka are bonkers. Very unique and considerably different than the same varieties grown farther north.

if you haven’t used much NZ Cascade that is one I’d search out. It might be one of my favorite hops right now. It’s like Simcoe but grown in NZ. Nothing like Cascade at all. Super terpy.

hmm. I do really like nz cascade but the peacherine I used previously was gifted from Steve at fidens (it was a blend of 3 lots from the 500g samples they got for hop selection). It really pop and was pretty potent. Haven’t used this lot yet, got it from another friend, so we will see. Only have the 9 oz so it’s all going dryhop

We got one of the first few boxes that came to the US a few years ago and use it in a single hop Pale Ale and as part of a beer with Citra and Idaho7 as well as a WC IPA that was equal parts Cascade and Nelson from Freestyle as soon as the 23 Crop landed in the US. I’ve never used a ton of it in a beer. Could be like Motueka where you hit a certain amount and it totally changes.

We did a single hop Pale Ale with NZH-105 that was kinda meh at 1.5#/bbl DH so we added the rest which brought it to 2.5#/bbl and it exploded. Tasted/smelled way more like an orange Julius than any beer I’ve ever had with the same name.

Another hop to put on your radar that’s not from NZ is Tangier from Segal Hop Ranch. We got 11# of the #500 total produced in 2023 and it’s pretty mind blowing. We mixed it with small amounts of Anchovy and High Oil Cascade from Segal in a 5% Pale Ale. It smells like candied Tangerines. It seems like the profile would work better in clear hoppy beer but we’ll see. Vinnie contracted a sh*t load of it for next year so it’s going from 1/2 acre to 25 acres with Vinnie buying 15 acres or so.

How do you experience motueka changing? In my experience in higher quantities it tends to get really mint like.
As for peacherine, I get quiet alot of peach of a few of the unsung hops from NZ, kohatu, rakau, waimea.
How does peacherine compare?
 
For those that have used spectrum: how many oz of hops is the 20g pouch equivalent to?

I've had good like with 509 Hops on eBay of all things. They've been the best smelling and intense aroma I've gotten as a homebrewer and I've ordered from YCH & Yakima Chief.

I thought the newest 2024 crop was supposed the be pretty good, but it hasn't hit the US yet.
 
Is it safe to order hops from YVH when the weather is so hot? Will they degrade a lot? Should I wait until the weather cools off? I'm on the east coast, so long trek.

I've never had an issue. They nitrogen flush and vacuum seal them so you don't have to worry about O2, just the heat. I'm in CT and they always get delivered in 2 days.

Are yall getting the same thing from vic secret?

I just gave Vic Secret another chance. It totally overpowered HBC 1019, which is no small feat. I was hoping the harshness would fade, but it never did.
 
I haven't used Galaxy in about 5 years. Haven't had a Galaxy beer I've enjoyed in forever. I get onion/shallot, diesel and BO. Similar to recent Mosaic.

Just kegged up a Citra/Strata Neipa today. Biggest DH to date = 9oz. 50/50. Smells like vanilla, strawberries and cream. First time using all Briess malt. Kegged on day 10 instead of my usual 14. Need it drinkable for a get together this coming Friday!
 
I would recommend going with Spectrum if the lots available to you are not that great. Me personally was lucky last year got super strong overripe pineapple galaxy lot from YCH, the lot after had more passionfruit and resin. I think it's a hop you really have to experiment with in terms of process, contact time, temperature, amounts etc etc.
 
I dont even bother with Galaxy anymore. Either unbelievably harsh or taste like peanut shells lol
I'm usually the same. I've so much from 2020 and 22 in my freezer that's just garbage. I've heard this Australian company has great local hops so I said I'll try it on last time. Needed to bulk up my order too to justify the high shipping costs. I'll let you know in a couple of weeks my verdict on it.
 
Has anyone used Galaxy 2023 and hated it?

Yes. Got some '23 from HopAlliance and while it didn't have as much hop burn, it tasted like peanut shells. This was at 45% of the grist with Strata and Mosaic.
On the other hand, I've tried a 100% '23 YVH Galaxy homebrew hazy and it was outstanding. I'd buy from YVH for sure.
 
I got a little dilemma, I brewed a hazy 12 ish days ago and getting ready to dry hop it... the problem is, I used my steam condenser lid and like a dummy I didn't adjust my boil off rate, soooo, I have a 6% beer instead of 7% beer... any thoughts on adjusting my dryhop rate with the lower gravity? The sample I took to check fg was a little harsh, but I expected that. I'm usually a 2oz per gallon dry hop rate but not sure if cutting back will help or hurt.

Divide your dryhop amount you planned by the original targeted Gravity points. Then take that number and multiply it by the new of points.

(Example: original DH 12oz original target 1.075 (75 Gu points) new og 1.065 (65 gu points)
12/75 = 0.16 Then 0.16 x 65 = 10.4 so the new dryhop is 10.4 oz
 
2024 galaxy has been pretty good for me. I've only used it in the dry hop along with other heavy hitters but I've been pleased so far. I don't get peanut shells from it anyway! Great to see people order from beerco too, the owner has always been a really nice guy.

Good to hear the BeerCo Galaxy is good. I probably won't go to heavy with it till I see how it perform. Might go back to the OG recipe on this thread of Citra, Mosaic and Galaxy in a ratio of 3:2:1
 
I brewed with some 2023 Galaxy from YVH and it was amazing, although I went a bit heavy on the hops and had to wait about 4 weeks for the hop burn to calm down a bit.

On the other hand, I tried to brew with some 2023 Nelson Sauvin from YVH and it was awful, just disgusting. The beer to me had a woody/jalapeno spice without the spicy burn, not sure how better to describe it.

To try and rule out other issues with this particular brew, I made "hop tea" with each of the individual hops I used by putting 2g of pellets in 3/4 cup of just boiled hot water. The Citra and Citra lupomax were ok, but the Nelson was gross.

Questions:
  1. Was my "hop tea" a good way to test if these hops were any good? Other suggestions?
  2. Has anyone ever returned a bag of "bad hops" to YVH? If so, how did that go?

Any chance you mixed up the hops? NZ hops tend to come off diesel like when they are poorer quality and AUS hops tend to be exactly how you describe above.

Obviously hops quality can vary but I’ve probably used 30lbs of Nelson or more homebrewing and I’ve never had Nelson give they polyphenol tannic wood and heavy hopburn character but have had that consistently with Galaxy since 2020

While anything is possible, I doubt that I mixed them up. I wouldn't say I got hop burn from the Nelson, I definitely did get it from the Galaxy I used, but once that went away with age, the saturated hoppy flavor was great.

I'm going to Albany in September, I'll bring you the bag of Nelson :p

Let me know when you head to fidens, I’m about 8 minutes from their taproom. I’ll take any excuse to tell my wife I’m running out for a beer lol
