I've just made up a yeast starter with 10g of cider yeast in a apples juice and honey mix. It is very volatile even after 30 mins in fridge. Have I made up too large a starter for a demijohn size?

what type of yeast did you use?
I used this calculator to determine I needed a starter and what size... but I am using an ale yeast. I would assume, if you know your starting OG, you could figure it out from this.
