this might be a dumb question. i was wondering if i could siphon off and bottle my first batch of cider just leaving the yeast cake and simply refill the carboy with the next 5 gallons of juice and sugar. Or do i need to clean and sanitize everything again?

It is recommended to wash, sanitize, and pitch "new" yeast for each batch.

You can re-use yeast, though. Often this is done through "yeast washing", which there are plenty of guides and videos for on the internet (here is a recent one: )
