Hello all. :mug: I'm a first time wine brewer that has lots of questions and wants to expand my wine making abilites.

My current set up is 2 - 1 callon glass carboys, 12 glass wine bottles with screw on caps, some red star wine yeast and a 3 foot section of plastic tube to siphon the wine from carboy to bottle. :eek:

So far I have made two batches of balloon wine. One with welches white grape juice and one with welches red grape juice. I think they turned out good considering they only fermented for 11 days in my two - 1 gallon carboys. I know.. I'm sure most of you are laughing right now but it's ok. I said that I want to expand my wine making abilities remember?!

I have also dabbled with brewing beer from the Mr. Brew kits. They turned out ok but I would also like to experiment a little more with beer as time goes on.

So that's about it for me.

My first wine was made via the balloon method and I'm still lookin for the monkey that crapped in it. :D I hope you have better luck than I did. There's plenty of great info here so you're in the right spot.

Thanks! Actually I really do think that both of my batches turned out really well. I mean as well as balloon wine can turn out I guess. :D It tastes great, maybe a bit sweet and the acid content might be a bit high but overall I'm pretty happy. Other than the headache the next day. :drunk:
Hence why I want to expand my knowledge. Things like, how do I get the white wines to appear "clear". Or how to use additives. Or what will happen if I let the wine ferment longer than 11 days. Say a month, or 4 months or longer?

As you will see, I have lots of questions but I know I have to do a little searching around here before I go wasting bandwidth on new thread that have been answered a million and one times. :D
