New vs. old SCOBY

I don't understand how to separate the new SCOBY from the old.
I've only done three brewings. After the first-stage brew, I thought the new SCOBY would have a disk shape like the original.
Instead the results were what you can see in the pictures, which I took about 10 days after my third brewing.
I hope they will show enough for someone to tell me what to do next.

The new one is on top and you can separate it like flaky biscuits. It's more important to pitch the tea as a starter then the scoby. I save about 16 oz and pour the sweet tea on top, it'll make a scoby.
 
I tried to separate the old from the new. The results are in the photo.
Are both pieces usable?

I don't think I'm looking at this from the same angle - literally.
When you say "the top", do you mean the disorganized mass on the right?
I assume so, since the hockey puck on the left looks like what I started with, but please confirm.
(Also please excuse my ignorance of the actual terminology.)
 
The new pelical forms on top of the liquid in the fermenter. and is easily pulled off. It is waste cellulose and not needed for fermentation but might help seal the top from O2 once it's not needed.
