New to Brewing - when to re-rack?

Hello all,
I'm making my first meads. I tried two different methods which I have added details ( the notes I took ) below. The first was started as a simple mead / open-air fermentation described in the book " The Art of Fermentation" by Sandor Katz. I started it in a bucket for about a week and it has now been racked with an airlock for about two weeks. The second I started with a yeast packet airlocked 2 weeks ago. Both are in gallon jugs. I am wondering when to re-rack? I haven't done anything ( stirring or adding anything ) since racking. I used "really raw" honey.

Jan 26th Homemade mead
Hydrometer gave me an initial 8% potential alcohol level
The mixture was 1 part honey to 4 part water.
  • This is mixed in an open container with cheese cloth on top
  • Started to smell bad, possibly from not getting enough oxygen
  • Otto might have stuck his hand in it
  • I didn’t sterilize super well
  • Seems like there is stuff floating around in this
  • I airlocked on Feb. 2nd

Jan 31st Mead
Hydrometer gave me an initial 5.5% potential alcohol level
The mixture was not measured. I just used all the honey I had left from the last mead.
I used a LALVIN, D47 yeast.
 
Wait to rack until primary is nearly done. I target 1.010 rack and let it finish then rack again before clarifying.
