high gravity yeast

4 oz yet to be named Hops.....

Dry or liquid extract? What yeast specifically? Hops too!

It would be liquid extract. The yeast would be WLP099 Super High Gravity Ale Yeast

The hops.....I am thinking Chinook or cascade maybe? I need something with a medium amount of alpha's to balance out the high amount of malt and the honey

I personally love brewing beer's that are VERY strong. This should get to at least 15% abv

I get 1.086 with five gallons, 8.5-9% ABV. Only 6 SRM. If you want 15% you need to only make 3 gallons. Good luck with that.

I'd add the Light LME at 15 minutes and the honey after a week in primary. In a year or two it may have mellowed out enough to drink it.
