So I am about to attempt a sunflower red ale (unsalted roasted sunflower seeds), does anyone have any suggestions?
 
Yes. I have a suggestion... put the sunflower seeds aside and then eat them while you are drinking your delicious beer.
 
Concur.

All seeds contain fats and oils which are not good for beer, especially used in quantities which will actually have a flavor impact.

I would stay away from the sunflower seeds because of the oils...already mentioned. If you are looking for a similar roasted flavor I would start playing with combinations of crystal and toasting some 2 row.
