Last picture I took of my Festbier before the keg kicked. Looks like it finally started to clear. Never had great head retention with this one - it was decent, but nothing like my octoberfest (which has caramunich 1 in it).

A few days earlier and it was not hardly clear at all.

WLP860 was used in this one and I did a decoction mash.

Marley's Mild Ale with West Yorkshire. Still young - kegged it Monday but I couldn't help myself. I deviated slightly from the recipe and did 77% MO, 7.75% Crisp Brown, 7.75% Victory, 5% Pale Chocolate, and 2.5% flaked oats. Went for 21ibu from a single hop addition of Fuggles.

It's delicious. @Northern_Brewer might disagree with the recipe which is 100% ok. I think it's a great beer, but I'd love to try a true English Mild at the source.
 
My hb’d funky dark with an esb grainbill fermented with French saison and funk weapon 1 aged on wild black raspberries, in my area we call them Black Caps (picked with my kids, about 1lb/gal) and Pinot Noir condition oak spiral. Beer was brewed April 23’ and bottled February 24’.

This beer is really cool. I’ve been tasting it monthly or so and it’s been very interesting and informative how the character has changed over time. Currently the nose is oak, funk, with just I kiss of jam notes. The flavor is very funk forward with some fruit leather, horse blanket, and tobacco. The vanillin’s from the oak come in next, and it finishes like a deep red wine with a touch of spice and notable tannin character (not unpleasant as the touch of bitterness cleans the palate.

Earlier this week i went to grab a keg from the kegerator that I thought I kicked in August so I could clean it (I know, lazy lol) well there were actually two pints left lol. This is my Mexican dark lager (modelo negra clone attempt)

Brewed something like a Strong Dark Belgian Ale today, so I am relaxing with a two-year-old bottle of St. Bernardus Christmas Ale. I wasn't crazy about it when I bought it, but it was too expensive to throw out. Time has taken the coarseness out of it, and now it's a lot like a strong ale I keep on hand.

Very early preview of my Spelt Saison. Not as carbed up as id like just yet, but nice. Earthy,Spicy, Dry and Bitter.

I wont touch the rest now for 3 months. Couldnt help myself.
 
Two years ago, this was supposed ro be an Irish Red but ended up more like a dark mild (before I was even acquainted with the style). Murky but tasty; it has aged well. So well that I'm tempted to try another batch, but wonder if thus was just beginner's luck.
