I am looking to do a one gallon mead, i am not interested in doing a JOAM at the moment but would like a simple one gallon recipe. Is a bucket primary needed or can you just go straight to a carboy?

3 lb honey
Juice an orange
Toss a cin stick and zest orange if ya want
Aerate like mad
Pitch Sweet mead yeast
Nutrient

Let it ride.

Use the bucket for primary
1 gal carboy for secondary

If you don't want cin and zest in prime, heat water a little water to about 160, add cin, zest, and honey. Let steep about 15 min. Syphon into primary.

Can't you just do honey water and yeast ? I think that's about as easy as it gets ....

Easier, maybe. Better tasting. Eh. It says use bread yeast and leave pith in primary. Why anyone would put such off favors in their drink I have no clue.

3-4 lbs honey
water
yeast

There you go. Adding yeast energizer and nutrient will help it finish fermenting a lot quicker, but they aren't—strictly speaking—necessary
