Hello, I'm a new member on the forum, but I've been brewing for about a year, now - if you don't count my apple wine adventures as an adolescent - and just got my first three carboys a few days ago. No more buckets!
I started my most-recent batch of something reminiscent of ginger-beer today. The xanthan is very experimental for me, but we'll see what happens. It's posted here:

I look forward to learning much more and, eventually, trying my hand at an all-grain recipe as well as experimenting with amylase extracts to convert non-typical carbohydrate sources into fermentable solutions.
