Ive brewed for 15 years, but always kits. this is my 2nd all grain brew
my first was to the letter from a recipie I found online, it was decent enough.
This one im putting together all on my own in an attempt to get a flavor i want.

Im looking for a red ale, with a hint of citrus overtone with a moderate bitter.
i like more head then a stadium that like to stick around and see whats up.

Since ive read what I can, and followed the general rules ive put this together
on my own. for a 4Q Batch, gunna keep the experiments smaller.
heres what ive got:

Muntons Ale Yeast (general strain) - may use coopers.

Going for a 4Lb (1800g) grain bill. with 1500g being base.

1000g pale malt 2 row
500g Cara Red Malt (red base malt for that nice color and flavor of red ale)
500g Cara Foam Malt (pils) a Pilsner malt with high head flavor and stability.

I MIGHT*** use some irish moss, i have a few grams here, but probably not.

for the hopping i plan to get:
10g Casscade Hop pellets (full boil duration)
4g Sterling hops (last 5-10 mins) for that citrus/spice.
2g Sterling going into the fermentor (probably)


someone told me i may need more then 10g of the casscade (14 they said)
but with 6g of the sterling hops being aroma/dry hopped will i really?

Now that you can see the general idea, im open to suggestions or quantities.
Dont wanna change the bill too much as im limited to using whats here DeFalco's
