Need help with Belgian Dark Wheat

I went to the City Steam Brewery in Hartford, CT a while and had their Winter Wheat Ale. They state it is a Belgian style beer. It was quite nice. Here is a description from their website:

WINTER WHEAT
A very complex DOPPLEDUNKELDOUBLEWEIZEN….which is sort of a cross between a dark German wheat and a Belgian Double, with a little oak aged Barley wine thrown in for good measure! 21P., served in a brandy glass.
Alcohol content: 8.5%


This is what I am thinking about.
1.078 SG / 23.5 SRM / 31.1 IBU
Any thoughts?

2.0 oz Carafa I -Dehusked (320.0 SRM) 0.88 %
1 lbs Candi Syrup, Dark (80.0 SRM)
0.75 oz Perle [8.00 %] (60 min) 23.5 IBU
0.50 oz Spalt [5.60 %] (30 min) 5.6 IBU
0.50 oz Goldings, East Kent [5.10 %] (10 min) 2.0 IBU
0.25 oz Coriander Seed (Boil 5.0 min) Misc


I'm thinking of using Forbidden Fruit yeast or a Strong Belgian or Trappist High Gravity yeast.
 
Seems interesting not sure why the Carafa with the drak candy sugar, but hey give it a whirl and see what happens.

8.0 oz Chocolate Wheat (400.0 SRM) 2.74 %
8.0 oz Crystal Wheat (66.0 SRM) 2.74 %
4.0 oz Caramunich-120L (120.0 SRM) 1.37 %
0.75 oz Northern Brewer [8.50 %] (60 min) 20.6 IBU
1.50 oz Hallertauer [4.30 %] (60 min) 20.4 IBU
1.00 oz Mt. Hood (Homegrown) [???%] (10 min) 3.2 IBU
Forbidden Fruit #3463 (Carboy #1)
Belgian Ardennes #3522 (Carboy #2)
Belgian Ale #WLP550 (Carboy #2)

I'm thinking about tinkering with Carboy #2. Might put 1 gallon on oak chips soaked in bourbon. Might even do a gallon of Brett infused beer or possibly bottle condition with Brett!
