I would like to make a kolsch next. Hefeweizen is getting bottled tomorrow or friday.
Couldn't find one in the recipe database. Anyone have a good one?

This one turned out good for me. The hops give it more of an herby flavor.

Perle Kolsch (5 gal batch)

Steep 30 min:
0.5 # British Victory Malt
0.5 # Munich Malt
0.5 # CaraPils

Boil:
2 # Extra Light DME (1# 60 min boil, 1 # added late: 15 min)
0.5 # Wheat DME (60 min boil)
8 oz Honey Powder (5 min boil)
3.3 # Muntons Extra Light LME (added with 15 min left in boil)

1 oz - 60 min Pearle
0.5 oz - 15 min Czech Saaz
0.5 oz - dry hop Hallertau Select

WLP 029 vial German/Kolsch (36hr wheat DME starter)

2 weeks in primary, 2 weeks in secondary (gelatin added in for week), then keg.

I would sub light DME for Pilsener extract if you can find it at your HBS.

I believe kolsch is another style that's heavily dependent on yeast for its specific flavor profile, too, so I wouldn't skimp on that.

Kolsch yeast is a great re-pitching yeast, too, especially if you're like me and get nightmares when hearing the word "lager."

I did the Austin Homebrew Kolsch twice. The extract kit, which I believe is all extract (no steeping grains), and the PM version. Both turned out very good.

I am currently enjoying the AHS PM version. Mine came out a little lighter and fruitier than the real deal (possibly because I watered it down a bit too much), but it still is absolutely delicious.

I made a decent Kolsch with:

7 lbs. Extra LME
1 packet Nottingham yeast
6 oz. Wheat
6 oz. Vienna
6 oz. 10L Crystal

1 oz. Tettnanger
2 oz. Halletauer

1 oz. Tett - 60
1 oz. Hall - 30
1 oz. Tett. - 10

Kegged after ~ 1 week

Threw this one together, gonna see what happens...
