I'm trying to brew a 10 gallon all grain clone of Sam Adams winter lager this Saturday. My spices already include 1 teaspoon cinnamon, 1 oz. ginger root and 2 oz. bitter orange. I would maybe also like to add a little nutmeg. whadda ya think? also I was planning on throwing them in around 15 min left in the boil however some peeps have said adding in the fermenter is better. What about sanitizing them if you do so?
Advice greatly appreciated! :confused:
 
I did a brew about 8 days ago with some of the same spices...I made a "tea" with a gallon of water and steeped the spices. I added the tea at flame out and stirred well before chilling. Doing it that way, I didn't have to worry about sanitizing any of the spices or having extra sediment.
