I made some JOAM this fall. It has been in the bottle for 1 month. I decided to try it and I was not at all impressed. Too much citrus and not enough body. But I realize it is still very young. Thus my question.

I poured about 2-3 oz out of a bottle to taste, so now I need to top it up before further aging- right? I have some sweet white wine on hand, can I use some for this? I don't want to buy anything.

The picture in my avatar is of my first JAOM at 35 days. It cleared and the fruit fell at 65 days and I bottled it 10 days later. Out of the fermentor it was all clove and orange. After 2 months it was very drinkable and at 4 months totally delicious. They tell me it's even better at 8 months, but mine never makes it that far...
