I'm looking for someone to help me come up with an all grain clone recipe of Deschutes Hop Henge IPA.

I'll send a 22oz. bottle of this lovely brew to someone who can help me come up with an AG recipe to recreate it. If it is available where they live I'll send them money to buy the bottle instead.

What I know:

From their web site:
* Several pounds of Centennial & Cascade hops are in each barrel with a heavy dry-hop presence to top it off.
* A blend of crystal, pale and caraston malts creates an overall biscuity characteristic that is dense and muscular, building the alcohol base to support the monstrous hop profile.
* 8.75% ABV
* 95 IBUs

From taking a FG reading on the finished beer:
* 1.024 (If my hydrometer is correct)

I've only brewed 6 AG batches, so I'm kinda new at this. I would imagine the OG needs to be about 1.090 or 1.091. There will be lots of cascade and centennial hops. I will happily send a free beer to someone who can help me with a recipe to come close to this beer. Who is the best person for the job?.. and are they willing to help?

Hop Henge started its life as an India Pale Ale, but this year it was bumped up to “Imperial IPA” status, with a hefty dose of additional hops.
“This one is lovely,” said taster Tom Conti. “They got it just right.”
It pours out a deep amber, with an appealing rocky head, and rich hop aroma wafting from the glass. “They sure dosed it with a lot of hops...[there’s] a lot of hop bitterness in the taste,” one taster observed.
In addition to the Imperial-level hopping, Hop Henge also boasts Imperial-level alcohol content, with 8.1% a.b.v.
This was the top-rated beer during its tasting session, and tasters had to dig deep for new superlatives to describe it. “This is a beautiful beer,” concluded taster Gregg Glaser. “Full of flavor and hops and malt and hops again.”
“Not for the timid,” said taster Robert Lachman.
 
you may want to degas your sample to get the most accurate hydrometer reading.
 
I am also very impressed with "Experimental" Hop Henge IPA. Had it on tap in Seattle area 2 weeks ago and it is fantastic.

Grist bill - seems like similar to the Green Flash West Coast IPA with the carastan.
It is slightly maltier/sweeter and darker so maybe 50/50 of crystal 60 or 80 and carastan.

Hops - I taste more then Cent and Cascade. Perhaps a Columbus bittering.

It would be interesting to drink these two fanatastic beers side by side and then add/subtract from the GF West Coast IPA (known recipe).

Both of these are on my radar to make this year.
 
Hey gonzo - Are you up to the task of trying to clone this sucker if I send you the bottle?.. I don't know if you can buy it in Santa Clarita.
 
If you email Deschutes and ask them for the recipe. They will send you a generic recipe with ingredients, the only catch is that it doesn't have the amounts.

I will put together what I think and send it to you. I will email deschutes and see what happens. I have not seen this locally but will look further.

It is funny how they say pale, crystal and caraston on their website and then tell you munich. I have emailed them and asked for the recipe. As soon as I hear back I'll put together a recipe and post here.

From the website "The newest incarnation of Hop Henge uses several new hop processes and techniques to create a truly unique and unexpected beer."

It is anyone's guess what this clue is. FWH, Mash Hop, hop tea? I have good luck using a hopback I made, but I need to use whole hops.
 
I'd look into hop bursting and massive additions in the whirlpool. Brings huge flavor and some IBUs without loosing aroma from boiling.

I'll have to find this IPA and give it a whack.

I'd also go with British Pale and skip the munich and 2 row. Gives some nice bready flavor without needed the munich.

Everyone knows that the 30 minute Centennial you have really needs to get tossed in at 28 minutes or everything will be completely off. :D:D

Nice effort at getting this recipe put together. :mug:

FWIW, if this is a high flavor hop bomb, it sounds similar to a Pliny and they boast close to 16 ounces of hops. I did a very nice clone and got away with only 12 ounces.
 
Looks good Gonzo, think we should boost the pale malt to get closer to the 1.090 OG that Deschutes calls for? Have you ever used carastan?.. the only place I've seen it is at B3.
 
I was up in bay area a week ago and drove to Morebeer in Concord. Picked up 3 lbs of Carastan. Their grain measuring station is awesome. I was able to open a fresh sack of carastan and carapils. I have not seen icarastan in the other 2 LHBS I frequent.

Bump up the grain bill as you see fit. I am using my equipment as a basis. I am shooting for 8.3% ABV
 
It is hard to hit a moving target, this year they have changed the recipe three times, check the batch number on you bottles. Hence the moniker "Experimental IPA" that they decided to go with this year.

Hey Ander, Do you have Hop Henge at the Co-Op? It made a brief appearance at Fred Meyer and was gone in a day.

I can attest to its changing. I had some when it first came out and it was alot maltier than the one I just got at the brewery last weekend.

Cool - Just ordered the grains for this from Brewmaster's Warehouse (my first order from them). Planning to brew it on 4/11/09 if the grain arrives in time.

EDIT: Ordered Marris Otter for the base malt. Haven't ever used it, but this seems like a good beer to try it on.

Good Choice Diatonic. I did not list MO as it is usually more expensive. With this recipe - what the hell. You may want to rachet down the Munich and Crystal by 10% because of this.
Make sure you get the hops lined up if you plan to brew in a week.

I've got a 1L starter whirling away on my strir plate for a 4/11/09 brew day :). I'm using WLP007 - Dry English Ale to try to get the FG down in the 1.014-1.016 range.
 
Diatonic,

If you have a 2 liter flask, I would step it up on day 3 to a 1800ml starter. This will help you on your goal of 1.014 FG.
OOPs, sorry. I just noticed today is brew day.
 
Today's brew day went well, except with the massive amount of hops, I had trouble getting it all in the carboy. I got better efficiency than I expected, and ended up with an OG of 1.096. It seems the crush from Brewmasters Warehouse does better than the crush from my LHBS. I only got 4.5 gallons in the carboy, and I planned for 5.5. The yeast starter went crazy on the stir plate... I don't think I'll have a problem with under pitching. Will update this thread later. Drinking a Hop Henge, and I'm a little bit fuzzy.

Good to see that bottle went to a good home :).

The massive amount of hops in the BK was more than my diptube strainer could handle, along with the cold break. Hopefully the brewing gods will smile on me and not infect my batch, but I had to get a little creative to get the 4.5 gallons I did collect in to the carboy. I ended up with an OG of 1.095, overshot by .005. I didn't want to add water and dilute the wonderful hop flavor I had going. If you brew this, keep in mind the challenge with this amount of hops in your BK. I had about half pellet, and half leaf hops. The leaf hops soaked up a lot of wort. I'm trying to think of the best way to dry hop this beast without losing more beer to the hops. The color seems right on, and the flavor of the hydro sample was really similar in hop profile to Hop Henge. I think it will be a really tasty batch :).

I did a 90 minute mash at 150F, then ramped to 168F for 10 minutes for mash out.

EDIT: The hop additions were too much for my SS scrubby strainer - 75, 60, 30, 15, 5, 0

I'm going to call it 1.095 OG. at 68F my hydro reads 1.094, which corrects to 1.095. My refractometer reads it at 23.2 Brix, which converts to 1.095.

Keep in mind that this brew is 'experimental'. My hop bill is slightly different here as I adjusted for the different alpha level of my hops. Also keep in mind that racking this can be a challenge, because it will be like hop stew when you're done. :)

This would be how I'd do a partial mash... it is based on a 90 minute full boil, with a boil-off rate of 15%/hour. I'd wait until 10-15 minutes before flameout to add the LME, so it doesn't get too dark. I did a 90 minute mash at 150F for my AG batch. Also, the LME pushes it very slightly outside the style guidelines for color (should be 8-15 SRM for the style.. and the AG version is right at 15). I buy most of my hops from freshops.com... much better pricing than LHBS, but you have to buy at least 12 ounces per order, and a minimum of 3 ounces of each variety. I've been really happy buying from them ... 3 orders in the last 3 months. I ordered the grain for this from Brewmasters Warehouse and was really pleased with the quality of the crush, grain, and the ordering process.

If anyone else brews this and wants to swap a couple bottles I'd love it.
 
I would use a hop bag next time, also. That will eliminate a lot of the straining problems, jsut use a big bag for good utilizaton.

As for reducing what the hops take up, well the hop bag will work out as you wont have as much of a trub layer. (can you wring out a hop bag?) Also I dunno, how about trying to rehydrate the hops in .5 litres of warm water and then add that to the boil.
 
I just had my first Hop Henge last night and it's gotta be one of the best IPA's I've ever had... just outstanding.

So I have to try this recipe... any news from folks that have tried it? I'm assuming the '0min' hop additions are dry hopped in the fermenter? What is the fermentation schedule? Cheers!
 
I think I'm the only one to brew it so far. I fermented the first 5 days at 66F, then moved it to 68F 2 days ago. It's still fermenting pretty strong. I'm going to take a gravity reading later today. The 0 min additions are at flameout. There is still a dry hop I need to do when I rack to secondary. I imagine it will be about another 2 weeks before I rack it to secondary, and will probably leave it there for 2 or 3 weeks.

I used pellets for Millennium and Amarillo, though I had leaf Amarillo. I plan to brew this again before long using all leaf, and if I can't find leaf Millennium, I'll just use pellets for that one. I think if I had it all in leaf form my strainer would work, and I could just collect a little more sparge water to compensate for the water soaked up by the hops. I don't know why I'm opposed to using a hop bag - I've got a couple of the 5 gal paint strainer bags but haven't used them, because of their effect on efficiency. I might consider using them for the 75 and 60 min hops - and add about 10% more to offset the loss, then not use the hop bag for the 30, 15, 5, and 0 min additions.

EDIT - Did you find Hop Henge in NYC?.. I didn't think Deschutes had distribution that far east.
