Ihead’s up! What I’m asking may be considered blasphemous her, apologies in advance. 😎

Has anybody tried making a non or low alcohol beer. If so, how do you do it? I like cold beer but for health reasons I need to try to limit my alcohol consumption so I figured I’d give NA beer a try. I know the NA beer you can buy leaves a lot to be desired. Thanks in advance for any assistance.
 
For homebrew there might be a issue of spoilage since there isn't much or any alcohol to keep the nastiest of bacteria and other things at bay. In the anaerobic environment of the beer in the bottle for the time it's in storage, things might get a little wild even for the best of sanitation methods.

But there are some threads about low alcohol brewing here. Every now and then there seem to be a renewed interest by more than a few that discuss it.

There should be some suggested threads on low alcohol brewing or non alcohol brewing at the bottom of the page.
 
I've fiddled with Low ABV Cold Mash brews a couple times. They still don't hit the stride of regular beer, but it's still better than iced tea.

Otherwise Hop Water gives those familiar flavors for the IPA inclined, though I haven't dedicated sufficient time to making anything I'm proud of yet.
