Have any of you made any great beers without really having a proper recipe?
I have some milled grains in a bucket that are a couple of months old but I cannot remember what is in there! Mainly 2-row with some munich or vienna and C40 i'm guessing.
Anyway I am going to brew today and add enough hops to IPA levels and hope for the best...
If its great i won't be able to replicate it but never mind!
 
That's what I'd do. I went to my LHBS and they completely messed up my grain order (and then crushed it and put it all into one bag). So I just let it ride and it turned out great. Not quite what you're talking about but you should just brew the stuff.

It's bubbling away now. Used Magnum, perle, cascade, centennial and Falconers flight hops plus S-04 yeast.
Should an interesting brew!
