I just ordered ingredients for my next 3 brews. Let me know what you think even though it's too late . The plan is to have all 3 done and ready to drink on my birthday, though the RIS will probably be green it should be ready to try.
HBT 08-08-08 RIS

This is the recipe I found for the 08-08-08 RIS only simplified for the sake of not having to order a whole bunch of random malts.

Ingredients:
#5 Rahr 2-Row Pale Malt 86.96 %
#.25 Crystal 40L 4.35 %
#.25 Crystal 80L 4.35 %
#.25 Honey Malt 4.35 %
.25oz Simcoe (60 min) 26.4 IBU
.25oz Simcoe (45 min) 23.7 IBU
.25oz Ahtanum (30 min) 5.1 IBU
.25oz Ahtanum (15 min) 2.7 IBU
.25oz Simcoe (10 min) 5.3 IBU
.25oz Ahtanum (5 min) 1.7 IBU
.25oz Ahtanum (1 min) 1.7 IBU
1 oz Ahtanum (Dry Hop 7 days)
.25oz Simcoe (Dry Hop 7 days)
Re-Pitch onto Notty Yeast Slurry from a Brown Ale.
Kind of a crazy hop schedule, but the goal is to get Pine and Grapefruit flavors with a strong malt backbone. My first shot at the style so I'm sure the next batch will need adjustments but practice makes perfect.
Orange Honey Hefe
------------------
BJCP 15a
Batch Size: 2.50 gal
Estimated OG: 1.055 SG
Estimated Color: 4.0 SRM
Estimated IBU: 14.9 IBU
Brewhouse Efficiency: 70.00 %
Ingredients:
#2.5 Rahr White Wheat Malt 50.00 %
#2 Rahr German Pils 40.00 %
#.50 Honey 10.00 %
.25oz Hallertauer (60 min) 9.9 IBU
.25oz Hallertauer (30 min) 5.0 IBU
.50oz Hallertauer (Dry Hop 3 days)
Wyeast #3638
I'll put some oranges in the primary. This is a modification of my first Hefe, I want it drier hence the honey. I wanted a lot of complexity, so I'm giving it some flavor and aroma hops. We'll see what happens.
