So, I made a kolsch last month and it was amaaaazing...
I used 9 lbs german pils, 1lb vienna and 1.5 carapils with saaz.

Og was around 1.052...and the end result was perfectly well balanced,
Medium bodied, drinkable yet full of smooth flavor....

So...this week, I decided to swap the vienna for 2lbs munich, to try and
Experiment... BUT I FORGOT THE CARAPILS! Aside from that...my mash, boil, hops, etc were identical.

My og here was at 1.043... is that going to be too light to handle the 2oz of saaz hops?
The fermentation was quick....and I'm going to let it sit on the yeast for another week.

Can anyone tell me what I could expect?

As a guess, less of a sweet malt flavor, which Vienna brings, and since most Munich malts are darker, the overall appearance will probably be darker. Without the Carapils, it will also feel lighter with less mouthfeel and less foam staying power.

Those two minor changes will probably affect the brew but I'm interested in hearing how it turns out.

Probably won't be much different. A bit darker, depending on the *L of Munich and the original *L of your Vienna, but nothing too exciting.
