my first recipe...trying to create a flavor profile

I guess this would be a partial mash. I'm gonna try this as a 2 gallon test batch. I'm thinking a pound and a half of light dme and a half pound of honey for the base, and chocolate wheat and crystal 80 for grains. I'm thinking I need a 3rd flavor, but I dont know if i should add honey malt into the grains or a half vanilla bean for the last 5 minutes of the boil. I haven't decided on hops yet but I figure ill use white labs california yeast. What do you guys think?

I'm thinking either a red or a brown ale, probably a brown with the colors the grains put out. Id like something with a hint of chocolate and caramel, but I also feel there should be a 3rd flavor as well.
