Hi all,
Some of you may have been aware that i was planning a coopers irish stout, well anyway i went to my LHBS and they didnt have any coopers irish stout just the normal one. But i was wanting a irish stout so he reccomended to me the muntons irish stout. So i went ahead and bought it along with 500g of DSM and 1kg of brewing sugar/dextrose. My point is if i pitch the yeast tonight let it sit in the fermenter for 10 days and barrel it for 19, will it be ready for christmas? Also i bottled my bitter 2 days ago so that will be deffo ready for christmas as were having a masive party!

It could take more than 10 days for fermentation. It's impossible to know until it's actually complete.

It might also take longer for the barreling conditioning. It's a hard call, but you should start it as soon as possible to increase the chance of it being ready in time.
 
I made that same recipe earlier this year - get started now, and bottle as soon as the SG is steady for a couple of days - it fermented out for me in 9 days. It was good after a 3 weeks in the bottle, but really tasty after about 8.

Thanks, im just waiting for the wort to cool down now as its around 24.6 degree (needs to be about 23-ish??) Get my cap and tap for the barrel ordered and the one i have is shot, even though the barrel is older than me...:p
 
Some would say 20C or less - but I've had no issues and I usually wait for 24C or less
