The yeast cake is this the goo inthe bottom of the carboy?
If so can you use it again or best to swish the whole lot out an begin all nice and fresh a new batch?

Yes, that would be the yeast cake (it is also mixed with some other stuff).

Yes, you can use it again, You can either pour another batch right on top, or wash the yeast and save it for later

Two cautions.

First, some people say using the whole yeast cake for a new batch is overpitching....I don't believe some people.

Second, it's probably a bad idea to pitch a very light beer on top of a cake that was made by a very dark beer, just because a bit of color/flavor may transfer.
