Brewed a Baltic Porter today currently in my 5-gal carboy for primary. This beer is brewed with a lager yeast at lager temp. I didn't account for my yeast starter, and by the time I added that, I filled the level up to the neck of my carboy. Is that not going to be enough space?

I have a blow off tube in the top, so I'm figuring I should be okay.

I'm just wondering if maybe I should siphon or decant a bit off the top before fermentation starts.

Decant some off into a screw-top wine bottle, and start lagering as soon as krausen subsides. That way, you can have a nice sample bottle when temptation strikes!

The carboy is sitting in a big bucket, so I'm not particularly worried. I'll just have to do a cleanup. I presume that whatever krausen I lose won't actually hurt anything though.
