I've brewed Ed Worts Haus Pale several times now, and it's great! BUT I want to modify it a bit because I got my hands on 2 oz of Sorachi ACE hops! (yes I found some!) and want to do a lemony summer american pale. substitutions and additions listed in parenthesis.

8lb 2 row
2lb vienna
.5lb Honey malt (substitution for .5lb 10L Crystal)
.5 oz Sorachi Ace- 60min (sub for 1 oz cascade)
.25 oz Sorachi Ace- 30min (sub for .5 oz cascade)
.25 oz Sorachi Ace- 15min (sub for .25 oz cascade)
.25 oz Sorachi Ace- 5min (sub for .25 oz cascade)
(addition) 8-10 grams Grains of Paradise last 5min

Nottingham yeast

Any thoughts or suggestions on these modifications? I've been getting efficiency steadily in the mid to lower 80s.
