I've got a package of white labs Belgian strong ale yeast and Belgian abbey ale yeast. Has anyone else experimented with using multiple yeast strains in the same batch? I'm wondering what benefits might be gained. I'm going to work on a Belgian Trippel and am thinking of using both strains in a 6 gallon batch.

I have used two strains in a tripel a few times. I mixed WY1214 and WY3787. The first time I used them in equal proportions and it tasted mostly like 3787. This makes sense because 1214 is known to be a slow starter, so the 3787 had a chance to get a head start. The next time I made a starter with the 1214 to get it going and just added the 3787 straight in. That batch came out great and seemed to be a good mix of the two strains.

So play with it and have some fun.
