Just bottled my JAOM, started around Thanksgiving. My wife thinks it's a little bitter, but you can still smell the orange, and it's quite nice already. Ought to be ready for the toast come next Thanksgiving.

But while I was bottling, my six year old came in and distracted me. A couple of the bottles, (8 oz "vita-malt" bottles) got capped with negligible headspace. Is this liable to be a problem? I could always uncap those two, and drain a little off.

Thanks! Just wanted to be sure they weren't more likely to become grenades, or some such.

Not as far as I know. If you have too much residual sugar I doubt a little headspace will help, since air takes up space, too. Less headspace = less oxygen to oxidize your mead while aging.
