I am a fairly new home brewer and I use the barons beer kits, and have had some very nice success with them. My last redwood ale was very good. My local home brew store sells these kits, but they add and adjust them to make other beers and at a tasting they shared a mango cervesa that was wonderful, and I am attempting the same brew, what I noticed with the kit is there are no finishing hops as with the redwood ale. Is the absence of finishing hops what makes a cervesa different from an ale and lager?

Cervesa, is the spanish word for beer. Typically, Mexican cervesa is a pale lager. Pale lagers are usually very lightly hopped (with some exceptions) and use little or no finishing hops. Make the kit once as it is written. If you want to tweak the recipe and add some finishing hops, do it next time.
