I have a mint plant and am planning on a mint and something metheglin. What about chamomile? I also have star anise, juniper berries, cloves, nutmeg and cinnamon.
 
Hmm when you figure something out let me know, I have tons of mint.
 
Thanks, it looks like star anise and vanilla are options with the chamomile and cinnamon and orange peel (maybe I'll use coriander) are good with the mint.

I'll post some pics of what I come up with.
 
So here's what I ended up doing:

3 lbs local honey (dark, but no label as to what type)
3 packets Bigelow Chamomile tea
1 dried star anise
1 tsp yeast nutrient
1 tsp yeast energizer
1 tsp pectic enzyme
1 packet Red Star Montrachet

This is for a one gallon batch (both 5 gal primary buckets are full). The only unique step was boiling a cup or so of water and adding the chamomile tea and star anise (both in a small muslin bag) and boiled for five minutes. I cooled this in an ice bath and added both the liquid and the bag to the must.

The star anise sure dominated the smell of the bag, so we'll see how a few weeks in the primary goes.
