I've been trying to malt some wheat. I have a one pound test batch that has already sprouted. Everything I have read said that wheat requires less modification. Does that mean I should start drying before the sprout is 75%-100% the length of the grain which seems to be the goal for barley or does it just mean that it will get to that point quicker?
