I'm sure these have been asked before, but I wanted to get a fresh look at what opinions people have on the malt extracts.


what impact does the quality of malt extract have on the finished product?

what difference would be noticed between using a DME and a LME?

any other suggestions around the use of malt extracts in my partial-mash brews?

Very high. It is my opinion that stale extract ruins a lot of extract beers.

Assuming both are fresh, DME has fewer maillard products and therefore is lighter in color and has a different flavor as well.

I would either buy DME or buy LME close to brew day from a place with high turnover. Alternately look at B3, Williams Brewing or other online vendors that package malt extract in oxygen free packaging.
