So, my buddy is going into the Army and told me that he'd be back around Christmas so the day before he leaves, I'm planning on making a batch of mead for us to drink when he gets back. However, my friend likes his alcohol to be bitter and the mead I make is in between sweet and bitter so I'm wondering if there's a way to flavor mead with hops without using any malt. Can I just boil the water and use the muslin bag to get the hops flavoring in it and then as it comes down from the boil, use the same amount of honey I'd use for any other mead?
 
I made some "IPA style mead" for my wedding (which is today :mug:). I used this recipe from meadist in which half the honey is boiled with the hops (citra, cascade, and centennial) for a normal 60 minute beer schedule and added to the other cool half of the honey.

From what I've researched, mead needs a lot of time to round out the younger harsher flavors and hoppy beers are supposed to be enjoyed fresh but at 8 months, this is still tasting good.
